No Whey Man

June 2nd, 2010

My partner in cheese came over this morning!  We got started on Feta.  It’s got some time left now, 6-8 hours to drain.  Then it’ll be pressed, salted, brined and devoured.  (This batch is not for sale.)

If you live in the Kincardine area, we are selling via cheese list and not the market this summer.  It’ll work like this: You’ll get an email saying: “We’re making chevre this week, if you want some let us know.”  And at the end of the week, we’ll get you your fresh cheese.  Email us at: rennetrebels@gmail.com to sign up for the cheese list.

Edited to add a picture of the beautiful finished feta.  I am really gonna have to do another month of ‘Shredding to keep the cheese pounds off.

I just finished a delicious sandwich with (sadly, not locally made) chevre and jam, and am craving a whole heck of a lot more. If you ever open up your cheese list to Torontonians, please–SIGN. ME. UP.

We want to taste and eat all! See you in two weeks! Will try to bring our delightful Hawaiian weather with us! Love to all

Allie – you’ll just have to bring the fam and come for a rural vacation. You’ll leave stuffed to the gills with cheese. ;)

    See you soon GreatGram!!!! xxxx

How far does it mail safely? Or how can I get my paws on some? I was looking at goat cheddar at Whole Foods today, a tiny wedge that would MAYBE make 1.5 sandwiches, almost $10. Madness!

Speaking of cheese, when did you start giving cheese/yogurt to Bob and Meeps?

Caitlin, if I made it on an early weekday and Xpressed it, it would be fine I think. Let’s try.

Allie – I think around 1 year? Though Meeps didn’t really eat any solids at all until 1 year, after a couple of botched attempts at starting solids. I would personally avoid cow and go for sheep or goat, more digestible for littles. And bigs too for that matter!

Mmm, I loooove feta! When I was in Greece I saw the farmers hanging up mesh bags of it in their milking stalls to drain. I think its one of the few authentic folk recipes that’s still followed to the letter!

I live in the states… think it would ship ?! or am i just pressing my luck? My favorite salad of the week is arugula , walnuts, craisins, FETA and a honey balsamic dressing. to die for.

Also, tried my hand at a little cheese making last summer and loved it. Is feta difficult?

Express post sounds good, the problem here is that often (and by often I mean always) Canada Post doesn’t like to deliver packages to our place, they prefer to leave notices in our mailbox at the front of the building and then we have to wait another 24 hours to pick it up.

Enormous pain in the arse, especially considering how much shipping costs in this country!
